Hot Chocolate Cookies

To take a break from watching 30 Rock tonight, I decided to go make some cookies! I knew I didn’t have any chocolate chips, so I was trying to find an easy recipe that either had no chocolate chips at all, or would taste good even without them.  This is what I found! The recipe says to press some mini marshmallows lightly on top of the dough, but that didn’t end up working for me. The marshmallows melted…but they ended up tasting really good. It was an extra sugary layer! Just for presentation, I added some marshmallows on top of the cookies after they were taken out (see the picture below).

Here is the recipe!

You will need-

  • 2 sticks (1 cup)  room temperature butter
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/4 cups flour
  • 1/4 oats
  • 4 packages Hot Chocolate Mix (not sugar free)
  • 1 teaspoon salt
  • 1 1/4 teaspoon baking soda
  • 1 cup white and 1 of semi sweet chocolate chips (I didn’t use these, but you go ahead)
  • 2 cups mini marshmallows

Cream together both sugars and the butter until light and fluffy. Add eggs and vanilla. In another bowl, whisk together the dry ingredients. Slowly add the dry ingredients to the butter mixture. Mix just until flour in incorporated. Add chocolate chips. Shape into 1 inch round balls and drop onto a parchment or silpat lined cookie sheet. Lightly press a few marshmallows in the top of each ball of cookie dough. Bake them in a preheated 350 degree oven for 9 to 11 minutes. Let cool for 5 minutes before removing from the pan.
