Vanilla Cupcakes with Coconut Frosting for Two

Hello! I was craving cupcakes so this recipe was perfect – vanilla cupcakes with coconut frosting for two. They hit the spot! I love my chocolate and coconut (especially together). If you’re not a coconut fan, just take out the flavouring and you’ve got a chocolate and vanilla cupcake. Happy eating!

You’ll need:

  • 1 egg white
  • 2 tbs sugar
  • 2 tbs butter, melted
  • 1 tsp vanilla
  • 1/4 cup flour
  • 1/4 tsp baking powder
  • a pinch of salt
  • 1 1/2 tbs milk

Preheat your oven to 350 degrees and line a muffin pan with 2 liners. In a bowl, add the egg white and sugar and whisk until combined.  Add in vanilla and melted butter and stir until mixed. Add flour, baking powder and salt and stir until smooth. Stir in milk. Divide batter equally between the 2 cupcake liners.

Bake at 350 for 10-12 minutes, or until cake is set. Let cool completely, then frost as desired. Thanks to How Sweet it is for the base of this recipe.

For the frosting, you’ll need:

  • 1/8 cup softened butter
  • 1/2 tsp vanilla
  • 2/3 cup icing sugar
  •  3 tbs milk
  • 5 tbs cocoa
  • 1-2 tsp coconut flavouring

Just to let you know- I just threw this icing together. Mixing all these ingredients together to get the right consistency of icing that you like is the key. First mix your butter and vanilla. Add your sugar and milk, and mix in the cocoa and coconut flavouring.
