Glazed Peach Cinnamon Puff

This is my go to recipe for when it’s my turn to make breakfast. This Canadian Living recipe originally uses apples, but I had a lot of peaches in the house, and thought they would taste just as good. So here you go- Glazed peach cinnamon puff

You’ll need:

  • 4 peaches
  • 1/3 cup butter, melted
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 3/4 cup milk
  • 1 tbsp granulated sugar
  • 1 pinch salt
  • 1/4 cup packed brown sugar
  • 1/4 tsp ground cinnamon or nutmeg

First- I’m going to tell you how to get the skin off the peaches very easy! Place the peaches in a pot of boiling water. Let sit for 30 seconds and then remove with a slotted spoon. Super easy!
Cut peaches into thick slices; set aside.

In blender or food processor, blend 2 tbsp of the butter, eggs, flour, milk, sugar and salt until smooth. Set batter aside.

In 10-inch (25 cm) cast-iron or heavy ovenproof skillet, heat remaining butter over medium heat; cook peaches, brown sugar and cinnamon, stirring occasionally, for 5 minutes.
Pour batter over peaches. Bake in 425°F (220°C) oven until puffed and edge is browned, about 20 minutes.If desired, invert onto serving plate, scraping any remaining peaches and syrup onto puff. Serve immediately.

Fun thing to make for breakfast! Hope you enjoy. Go ahead and try this recipe with different fruits, like pear and apple. Maybe even bananas! Mix up the spices maybe?
