Bacon Wrapped Eggs

Oh yes. Bacon wrapped eggs. A combination of two amazing things. The only thing I was missing was cheese! There was none in the house, and once again, I was too lazy to get some. It was delicious without it, but cheese would have added some extra “oomph”! This recipe doesn’t have a specific amount of each thing. Just make as many as you want! It’s pretty simple.

You’ll need:

  • bacon
  • eggs
  • fresh herbs (I used thyme and oregano)
  • cheese (cheddar and goats cheese work well)
  • salt and pepper

Cook the bacon on medium heat, until it is brown, but still bendy and floppy.

Preheat your oven to 400°.

Line a muffin pan with the bacon, using small pieces to line the bottom, and long ones to wrap around the edges.

Crack an egg into each one, the use salt and pepper to season.

Add the cheese, and fresh herbs and pop it into your oven for 15 minutes.

Once they’re done, use a knife around the edges to get them out, then they are all ready to pop in your mouth! YUM!
